Just had to share this recipe with you, it’s really easy!! Yet tastes sensational!
I only made a small portion but you could easily make a larger version and repeat the layers in a large trifle style bowl or a sundae glass.
- 2 Hob Nob Biscuits or Digestives
- Handful of Large seedless red grapes
- 50 grams Low Fat Natural Vanilla Bio Yoghurt
- 50 grams Raspberries
- 1 tsp Caster Sugar, optional
Blitz the raspberries and sugar in a small blender and then place the mixture in a small saucepan and gently heat, adding a little water. Bring to a steady boil and simmer gently I until it thickens slightly and reduces a little. Then set a side.
Crush the biscuits and place in the bottom of a serving glass, I used a ramekin dish which was a nice size for one, top with the vanilla yoghurt and then place the halved red grapes on top. Drizzle the raspberry sauce on top and serve.
