Chocolate Cupcakes

Cheeky Chocolate Cupcakes

I had some friends round for some sweet treats and decided cupcakes were just the thing us girlies needed. I was right! Simple to make and super tasty, these never fail me. Packed with plenty of chocolate too, a real winner with ladies and gents.

Makes 12 Cupcakes

– 6oz/175g Stork Butter
– 6oz/175g Caster Sugar
– 3 Eggs
– 6oz/175g Self Raising Flour
– 1oz/25g Cocoa Powder mixed with 1tbsp warm water, mixed to a paste

For the Toppings

For the Chocolate Buttercream
– 50g/2oz butter, softened
– 85g/3oz icing sugar
– 25g/1oz cocoa powder, sifted
– 1 tbsp milk

For Decoration
Maltesers, Toblerone, Chocolate Buttons, or any chocolate/confectionary you like.

Preheat the oven to 180 degrees.

Cream together the butter and sugar. Then gradually add the eggs one at a time ensuring they are well mixed before adding each egg.

Sift in the flour and cocoa powder mixture. Mix well.

Place the mixture carefully into cupcake cases, not filling them too much as they will rise in the oven.

Place in the preheated oven for 15mins or until cooked through.

Cool on a wire rack completely before decorating.

For the buttercream; beat the butter until softened and creamy. Add the icing sugar gradually along with the cocoa powder and mix well. Add the milk if needed to loosen the mixture slightly.

Decorate with a good smear of icing along with chocolates on top of your cupcakes. You can even make royal icing using just water and icing sugar too.

Serve and enjoy!

The girlies really enjoyed the cake and I made hot chocolate too with marshmallows, maltesers, cream and chocolate flake!!! Chocolate overload……divine!! The cherry on top was quite literally the maltesers though, my favourite. We sat back and relaxed, enjoyed our cake and hot choc whilst watching a girlie film. Would highly recommend!!!! x x
